WIAW: Greek Salad Veggie Sandwich

Hi to my favorite blog readers!  It's time to recap what I've been eating.

Well, I decided that my Tuesday food recaps were looking too similar.  So, I thought I'd shake things up and document my Monday eats for this week :)

Before I get to all that, I was thinking about how I told two of my sweet & beautiful friends about how the name of the blog came to life.

And you know what?  I don't think I ever actually shared it on the blog before!

So, when I get hungry, I get super cranky.  Everyone close to me knows to stay out of my way or throw some crackers at me if I haven't eaten in several hours.  Maybe I'm dramatizing a bit... But, my husband refers to my hangry (hungry + angry) moods as The Hungry Monster.  And when I might snap at him about something silly, he knows that it is the hungry monster attacking.  Hence the name: Attack of the Hungry Monster!

Cool story, bro?

Ok, let's move on.
Breakfast: Cereal & Fruit
Words cannot express my love for Quaker Oatmeal Squares cereal.  If I had to put it into words, it would be, "nom nom nom."  Which is really gibberish, but it means I like them alot.  I topped this bowl with half a banana and a couple sliced strawberries, followed by some almond milk.  I also had some coffee.

Mid Morning Snack: Nuts & Fruit
For snack I had a sliced apple and some roasted almonds.  I just plopped my snack right in the middle of all my work stuff.  When snack time arrives, everything else waits ;)  I also had a mug of green tea.

Lunch: Greek Salad Sandwich & Melon
10 years ago I would have laughed in your face (apparently I was rude 10 years ago) if you had told me I would get full from a sandwich with no meat.  But this sandwich is super duper filling and packed with flavor (not to mention, nutrients).  Here's the run down:

Greek Salad Sandwich
Cucumber slices
Tomato slices
Fresh spinach (or romaine lettuce)
Matchstick carrots
Hummus
Red pepper relish
Crumbled feta cheese

I enjoyed some delicious watermelon on the side.

Afternoon Snack: Yogurt & Granola 
It kills me that I took a picture with the Chobani label upside down.  OCD alert!  Anyways, I enjoyed a lovely snack of yogurt with the last dregs of my granola before leaving work to hold me over til dinner time.

Dinner: Meat & Potatoes
It was a great day to fire up the grill, so I threw some sirloin steak (which was a little too done for me, but perfect for my husband) and asparagus on the grill.  I also made some light, garlic mashed potatoes.  Thank God I only made enough for me and my husband, because I seriously could have eaten an entire plate of these potatoes.

Dessert: Fro Yo Cone 
Can you tell I love fro yo?  I like this brand that our Kroger has started carrying.  The cookies & cream is the best!  I had a lil' sugar cone full of it.

Ok, I am going to try and get a craft together for Friday's post.  Fingers crossed that it turns out good ;)

  3. Yummm looks like a great day! I will have to make that pita sandwich soon...I looove Greek flavors (bring on the feta!)
